Dancer's Chipotle Bbq Sauce

    Dancer's Chipotle Bbq Sauce

  • 1 tablespoon olive oil
  • 1/2 cup chopped onion
  • 2 tablespoons minced garlic
  • 1 cup ketchup
  • 1/4 cup malt vinegar
  • 1/4 cup golden brown sugar
  • 1/4 cup coffee, strong brewed
  • 3 tablespoons beer, stout (like Guinness)
  • 2 tablespoons molasses, unsulphured (light)
  • 2 tablespoons tomato paste
  • 2 teaspoons Dijon mustard
  • 2 teaspoons Worcestershire sauce
  • 1 1/4 teaspoons canned chipotle chiles, minced
  • 1/4 teaspoon ground black pepper
  • Heat oil in heavy large saucepan over medium-high heat. Add onion and garlic and saute until tender, about 5 minutes. Add all remaining ingredients. Cover and simmer until slightly thickened, stirring occasionally, about 25 minutes. Season with salt. Can be made 1 week ahead. Cover and refrigerate or can for longer storage.

    Makes 10 servings.
