| Butter beans, slow-cooked with bacon and chipotle. | ||
 
Fry up some thick sliced bacon, nice and crunchy, but not burned... Remove from DO. Saute some onion - to taste, but you don't want a lot or you'll over power the beans - in bacon grease until golden. Without draining bacon grease, add a can (or two, or three) of butter beans and water to dilute until soupy. Simmer until thickened. Serve with bacon crumbled on top and fav hot sauce on side... If doing the chipotle way, saute the chipotles in the bacon grease with the onions (or before, then add onions and continue sauting until onions golden). Remove chipotles and serve on the side with the beans... Or leave and let whomever fish out...
