Lima Beans and Peppers

    Lima Beans and Peppers

  • 10 oz Frozen baby lima beans
  • 3 tb Olive oil
  • 1/2 c Green peppers, cut into thin Strips
  • 1/4 c Sweet red pepper, cut into
  • 1 Thin strips
  • 1/4 c Onion, finely chopped
  • 1 Cayenne or other hot pepper - chopped fine
  • Cook beans in boiling salted water. Drain; keep warm. Heat oil in a small skillet. Add peppers and onion; saute for 5 minutes. Combine lima bean and pepper mixture gently. Serve immediately.
