    Filet Mignon With Pasilla Chile Sauce

  • 4 filet mignon steaks -- (8 ounces each)
  • Salt and freshly ground black pepper to taste.
  • Pasilla Chile BBQ Sauce
  • Pasilla Chile BBQ Sauce:
  • 1 1/2 cups New Mexicostyle BBQ Sauce
  • 2 tablespoons maple syrup
  • 2 tablespoons pasilla chile powder
  • 1/4 cup chopped cilantro
  • Mix all ingredients well and marinate filets for 1 hour. Prepare a wood or charcoal grill and let burn down to embers. Remove filets from BBQ sauce and cook on grill for 4 minutes on each side for medium rare.
