    Traditional Chutney (Judith Choate)

  • 4 cups ripe mango -- peeled and sliced
  • 1/2 cup lime -- *seeded and chopped
  • 1 cup onion -- chopped
  • 1/2 cup fresh ginger -- grated
  • 3 cloves garlic -- peeled and minced
  • 3/4 cup white raisins
  • 2 cups light brown sugar
  • 1 cup apple cider vinegar
  • 1/4 cup fresh orange juice
  • 1/4 cup fresh lemon juice
  • 1 tablespoon mustard seed
  • 1 teaspoon crushed red pepper -- * see note
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • Place all ingredients in heavy pot over medium heat. Bring to a boil. Lower heat & simmer for about 20 minutes, stirring frequently. Remove from heat, cover, & let stand for about 12 hours. Again bring to a boil, lower heat & cook for 15 minutes, stirring frequently.
    Process for 15 minutes in boiling water bath.
    Makes 4 half-pints.
    NOTES : * Chop lime by hand, try 1 1/2 teaspoon hab powder
