    Chicken Fajitas

  • Marinade (to follow)
  • 1 lb. chicken, skinless, boneless, cut into strips
  • 8 flour tortills
  • 2 Tbsp. oil
  • 1 medium sweet green pepper, seeded and cut into 1/4" slices
  • 1 large onion,halved and cut into 1/4" slices
  • 2 medium tomatoes, halved, seeded and cut into thin wedges
  • Avocado dip, picants sauce, sour cream for toppings
  • Marinade
  • 1/2 cup. Italian dressing
  • 1/4 cup. fresh lime juice
  • 2 Tbsp. light brown sugar
  • 1/4 tsp. ground coriander
  • 1 clove garlic,finely chopped
  • 1/2 tsp. salt
    Stir all together.
  • Pour marinade over chicken in bowl. Chill, covered, overnight. Wrap tortillas in foil. Warm 350 for 10 min. Heat oil in large skillet over med-high heat. Remove chicken from marinade. Stir-fry meat. Add pepper and onion; stir-fry 3-5 min. Add tomatoes; stir-fry 2 min. Bring skillet to table so everyone can fill a tortilla with chicken and vegetables and choose a topping.
    Serves 4.
