    Chicken Fajitas

  • 1 Onion, chopped
  • 2 tb Chili Powder
  • 2 Garlic Cloves, chopped
  • 1 Lime, juiced
  • 1 t Cumin
  • 1 t Oregano
  • Salt & Pepper, to taste
  • 1 cn Beer
  • 6 Chicken breasts
  • Oil
  • 1 md Onion, wedged
  • 1 md Green Pepper, wedged
  • 1 md Red Pepper, wedged
  • Garlic, to taste
  • Blend first eight ingredients in food processor until well blended.

    Slice chicken breasts into 2 inch strips. Marinate chicken at least 30 minutes, but preferably overnight.

    In a large saute pan, heat some oil and add some onion wedges, green and red pepper wedges, some garlic, salt and pepper. Toss for a bit and then add the chicken strips. Saute, stirring constantly until the chicken is cooked through.

    Serve with flour tortillas with sour cream, salsa and raw onion accompaniments.
