|Pat Chapman's Pili Pili Chicken|
Heat oil and fry spices 1, the garlic, ginger and onion in that order leaving one minute before adding each ingredient.
Add spices 2 and a small amount of water just to prevent sticking. Add the pepper, chilli and the chicken and stir-fry for 10 minutes. Add the coriander and tomatoes and stir-fry for another 5 minutes. Check the chicken is fully cooked through by slicing a large piece in half and then serve at once.
