    Pat Chapman's Pili Pili Chicken

  • 675 g cubed, skinned chicken breast
  • 4 tablespoons sunflower oil
  • 2 garlic cloves chopped
  • 1 2 inch piece fresh ginger, finely chopped
  • Half a Spanish onion, peeled and chopped
  • Half each of red, green and yellow capsicum peppers, chopped
  • 3 fresh green chillies, chopped -- (3 to 6)
  • 2 tablespoons chopped fresh coriander leaves
  • 2 fresh tomatoes, chopped
  • Salt to taste
    Spices:
  • 1 teaspoon white cumin seeds
  • 1 teaspoon mustard seeds
    Spices 2
  • 1 teaspoon turmeric
  • 1 tablespoon curry powder
  • Heat oil and fry spices 1, the garlic, ginger and onion in that order leaving one minute before adding each ingredient.

    Add spices 2 and a small amount of water just to prevent sticking. Add the pepper, chilli and the chicken and stir-fry for 10 minutes. Add the coriander and tomatoes and stir-fry for another 5 minutes. Check the chicken is fully cooked through by slicing a large piece in half and then serve at once.
