    Thai Chicken with Basil

    INGREDIENTS:

  • 3-4 tablespoons finely chopped California green chiles, seeded
  • 2 tablespoons soy sauce
  • 1 teaspoon sugar
  • 1 teaspoon vinegar
  • 1/2 cup chopped fresh basil leaves
  • 1 teaspoon chopped fresh mint leaves (or 1/2 teaspoon dried)
  • 1/2 teaspoon cornstarch
  • 3 tablespoons vegetable oil
  • 2 whole chicken breasts (1 pound each), boned, skin, cut into 1/4-inch strips, 2 inches long
  • 2 cloves garlic, minced
  • 1 large onion, halved, then slices 1/4 inch thick
  • Mix together chiles, soy sauce, sugar, vinegar, basil, mint, and cornstarch; set aside. Heat 2 tablespoons of the oil in a large frying pan or wok over high heat. When oil is hot add chicken and garlic. Cook, stirring constantly, until meat loses its pinkness, about 4 minutes; turn out of pan and keep warm. Heat another tablespoon of oil in pan, then add onion; cook stirring for 2 minutes. Add chile mixture and return chicken and juices to pan; cook, stirring until sauce thickens slightly. Transfer to a serving platter and keep warm. Serve with hot fluffy rice.

    Serves 4-6.
