    Three Citrus Chicken

  • 4 boneless skinless chicken breast halves (5 to 6 ounces each)
  • Three Citrus Habanero Marinade:
  • 1 tsp. grated lemon zest
  • 1 tsp. grated lime zest
  • 1 tsp. grated orange zest
  • 1/3 cup fresh lemon juice
  • 1/3 cup fresh orange juice
  • 1/4 cup fresh lime juice
  • 2 Tbl. olive oil
  • 2 tsp. honey
  • 1 habanero chile, seeded & coarsely chopped*
  • 1/8 tsp. freshly ground pepper
  • 4 sprigs fresh cilantro, for garnish
  • On a work surface, put the chicken between 2 pieces of plastic wrap and lightly pound to a uniform thickness. Put into a shallow baking dish. Prepare the three-citrus habanero marinade: In a small bowl, combine all the marinade ingredients, whisking until blended. Pour over the chicken, turning to coat on both sides. Cover and marinate in the refrigerator for at least 2 or up to 6 hours. Preheat the grill to medium and brush with oil. Grill the chicken for 4 to 5 minutes on each side, or until nicely marked and cooked through. Remove to a warm platter and garnish with the cilantro sprigs. *Fresh habanero chiles range in color from dark green to orange to deep red. Because of their extreme heat, be sure to wear rubber gloves with handling them.
    Serves 4
