    Hot and Sweet Chili

  • 2 lb ground beef
  • 1/2 each green and red capsicum peppers finely chopped
  • hot green chilli`s -- (8 to 12)
  • 1 onion finely chopped
  • 1 rib of celery very finely chopped
  • 2 14oz cans chopped tomatoes
  • 2 Tablespoons tomato puree
  • 1 can red kidney beans drained and washed
  • 1 teaspoon ground cumin
  • 2 teaspoons hot chilli powder
  • 2 Tablespoons pure honey
  • 1 rounded Tablespoon dark chocolate powder
  • 8 cloves garlic peeled and crushed
  • 1 vegetable stock cube
  • salt and pepper
  • METHOD
    1 In a large heavy frying pan heat the oil and fry garlic for 1 minute then add onion celery and bell peppers reduce heat and sweet down until onion is soft and translucent.
    2 Add chilli peppers stir in about 1 minute increase heat and add meat then cook until all meat is light brown.
    3 Add spices,stock cube and tomatoes stir in and reduce heat allow to cook for 20 minutes stirring occasionally.
    4 Add tomato puree and season to taste.
    5 Add honey and chocolate.
    6 Stir and simmer for 10 minutes then serve.
