Take about two lbs of fresh cod, or a like firm fleshed fish, sprinkle with flour, salt and cayenne pepper, both sides and let rest in fridge..Make sauce...3 fresh tomatoes, peeled and chopped, 2-3 Jalapenos, seeded and chopped, 1 medium onion, chopped, 3 tablespoons of shredded fresh ginger at least, 2 finely chopped garlic cloves....little chicken stock...simmer until thick and vegs cooked..add flour if too thin. Meanwhile, take fish, and fry in a little olive or peanut oil, until browned both sides, put in a warm oven while the sauce cooks....serve with rice, and with a broccolli and cauliflower stir fry.
