Marinate pork chops overnight or up to 24 hours. Remove from marinade,
Grill 4-6 minutes a side(depending on thickness) on high with the cover closed.
IF the chops are very thick, (over an inch)
place in 325 F oven for 10 minutes or turn the grill down to low and cook another 10 minutes.
Sauce:
Over med-high heat, melt the butter and oil. Add shallots and cook 2 minutes. Deglaze with white wine
and vinegar. Cook 1 minute then add jalapeno, mustard, jelly and chicken stock. Simmer to desiered thickness. Season with salt and pepper.
Add butter (if using) to finish the sauce just before serving.
Serving Ideas:
I served this with Garlic Mashed Potatoes and baked Zucchini with Tomatoes and herbs.
