| Pasta With Spicy Tomato Sauce | ||
 
This recipe is all about tomatoes, garlic and pasta. I've recently, discovered an exceptional pasta (I found it at Trader Joes) that is made with vintage casts that leave tiny ridges on the pasta. These ridges allow the sauce to stick better. This pasta goes well with all kinds of chicken, white fish or with some steamed vegies. Boil 5 quarts water with 2 tsp kosher salt. While water is boiling; Heat olive oil with garlic, chile and oregano over very low heat and cook for 10-15 minutes. Increase heat to med-high, add juice from can of tomatoes. Simmer until reduced by 1/2 (about 10 minutes). Add pasta to water and cook for 10-12 minutes. Add Tomatoes and simmer 10 min over low heat. Mix pasta with Tomato sauce and cheese. Drizzle with Truffle oil and fresh herbs. This makes a great addition to fish or chicken. Simple and always a hit. This recipe is the property of PepperFool.com TM.
