Chile Head Latkes

    Chile Head Latkes

  • 2 medium potatoes
  • 1 small onion
  • 1 finely minced clove of garlic
  • 1 teaspoon dried, crushed oregano
  • 1/2 teaspoon cumin -- (1/2 to 1)
  • 1 pinch cayenne
  • 1 or more minced chiles. (Jalapeno? Super? Habanero? to suit your piquency level)
  • 3 eggs
  • 1 pinch salt
  • matzoh meal-optional
  • Grate the potatoes and onion. Add the garlic clove, oregano, cumin, cayenne, and chile pepper. Beat in the eggs. Add salt. If the mix seems too liquid, add the matzoh meal.

    Fry latkes in oil, serve with warm salsa and sourcream.
