Cranberry Salsa

    Cranberry Salsa

  • 2 Oranges
  • 2 C Cranberries, Fresh
  • 1/4 C Salad Oil *(I'm not so sure about this)*
  • 1/4 C Onion -- minced
  • 1 Tbsp Cilantro -- minced
  • 1 Tbsp Ginger Root -- minced
  • 1 Chiles Serranos *(or your favorite)* -- minced
  • Cut peel and all white membrane from oranges. Grate or zest 4 Tbs of the orange peel. Coarsely chop orange sections. Coarsely chop fresh cranberries.

    Combine all ingredients. Season to taste with salt. Let sit at least 3-4 hours before serving.

    Yes, I would question all that oil--in fact, any oil. (This is the first salsa recipe I have ever seen that called for oil.) If anything, I would think lime juice might be good, and personally, I think I would use more cilantro and chiles, but I haven't tried it so this is just a guess.
