Chimichurri Sauce

    Chimichurri Sauce

  • 1/2 cup oil
  • 1 cup vinegar
  • 1 teaspoon salt
  • 2 cloves garlic -- crushed
  • 2 tablespoons parsley -- finely chopped
  • 1 scallion -- chopped
  • 1 small tomato, peeled, seeded, chopped
  • 1 small sweet pepper -- finely chopped
  • 1/2 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/2 teaspoon chili powder
  • 2 bay leaves, broken in small pieces
  • 1/2 teaspoon oregano
  • Mix ingredients together in a bottle or jar. Let stand for at least 12 hours, or a full day in a dry place. Shake prior to use.
