George's Fish Marinade

    George's Fish Marinade

  • 4 tbsp quality soy sauce
  • 3 tbsp quality fish sauce
  • 2 tsp sugar
  • 2 tbsp lime juice
  • ~1/4 C fresh cilantro, minced
  • 4 cloves fresh garlic, minced -- (4 to 5)
  • 1 tbsp fresh habanero, minced -- (1 to 2)
  • 1 tbsp fresh thai chile, minced -- (1 to 2)
  • Mix all ingredients together and allow to steep for ~4 hrs or overnight. Pour into a Ziploc plastic bag and add fish. Squeeze out all the air and seal. Allow to marinate for at least 2 hrs.

    This is particularly good with fresh tuna steaks that you then grill over hickory. Gives me a culinary boner.
