Blue Cheese Grits

    Blue Cheese Grits

  • 1 1/2 cups lowfat milk
  • 1 clove garlic -- minced
  • 3/4 tsp salt -- divided
  • 1/2 cup quick-cooking grits
  • 1/4 cup blue cheese -- crumbled
  • 2 tbsp butter -- cubed
  • 1/4 cup heavy cream
  • 1/4 cup egg substitute
  • 1 egg white -- lightly beaten
  • 2 tbsp Blair's Jalapeno Death -- or other green sauce
  • 1 tbsp parmesan cheese
  • 1 tsp dried basil
  • 1 tsp dried thyme
  • 1/8 tsp black pepper
  • In a saucepan, bring milk, garlic and 1/2 tsp salt to a boil. Gradually stir in grits. Cover, reduce heat, and simmer for 10 minutes, stirring occasionally.

    Whisk in blue cheese and butter until melted. Add 1/4 tsp salt, heavy cream, and remaining ingredients; pour into a lightly greased 1-1/2 qt souffle dish.

    Bake at 350F for 45 min-1 hour. The center will be slightly soft.

    Serve with catfish and cole slaw.
