|Spicy Tofu & Pork Soup|
In a wok or large skillet, heat the oil. Add the pork, onions and garlic and saute over high heat, stirring occasionally, until the pork is no longer pink, about 4 minutes. Season with salt and pepper.
In small bowl, combine chile paste and sugar. Add to pork mixture in wok. Stir and cook for 2 minutes. Add broth and bring to a boil. Cover and cook over low heat, for 10 minutes.
Add zucchini to the wok and cook over medium heat until almost tender, about 2 minutes. Add the tofu and simmer for 2 minutes longer. Add the scallions and chile and simmer for another minute. Ladle into bowls and serve with cooked white rice on the side.
