    Tex Mex Sloppy Joes

  • 1 cup cooked ground turkey -- seasoned with
  • 1/2 onion -- chopped
  • 1 tbsp oil
  • 1 tsp ground pure chile
  • 1 cup monterey jack cheese -- shredded
  • 1/4 cup Red Lion 20 Pepper Salsa
  • 2 large rolls -- * see note
  • Preheat oven to 350F.Preheat a nonstick skillet over medium-high heat. Add oil and onions. Cook until onions are soft. Add the turkey and cook until it is heated through. Sprinkle in ground chile and cook for another minute until fragrant. Turn off heat. Add cheese and salsa. Mix well.Rip 2 sheets of tin foil - large enough to wrap each roll in. Spray with a bit of cooking spray. Top with rolls. Open up. Place 1/2 the meat mixture in each roll. Top. Wrap up and bake for 20 minutes until cheese is melted.Serve with some tomato soup and a salad. NOTES : Risa's notes:*
    Rip out some of the breading from each side of each roll. For the cooked turkey, I used already cooked "mexican meat" - which is a combination of ground turkey, onions, tomatoes and chiles that are cooked together. I freeze it in small packages for quesadillas, enchiladas, burritos and such. I used 1 cup of this mixture. If you wish, you can use just straight cooked ground turkey and cook some onions, tomatoes and chiles together until the turkey is no longer pink and the onions are brown.
