    Turkey Tortilla Casserole

    This was last night's dinner - Southwestern Cornmeal Pizza. It was delicious. I made the pizza dough in the ABM and then cut it into pieces, rolled it out and baked it. This was terrific. Even picky son loved it. Ate 2 slices. So did I. So did hubby. Winner.

    I also snuck some veggies and meat in under the cheese and Trev didn't really notice until near the end of his second slice. He picked the last of it off the pizza. Still enjoyed it though. I got a thumbs up.

  • 1 1/4 tsp SAF yeast
  • 1 tbsp sugar
  • 1/4 cup lukewarm water
  • 1/2 cup yellow cornmeal
  • 1/2 tsp salt
  • 1 egg -- lightly beaten
  • 2 tbsp milk
  • 2 tbsp corn oil
  • 1 3/4 cups all-purpose flour
  • 1/2 4 oz can diced green chiles -- drained
  • 2 lg tomatoes -- sliced 1/4" thick
  • 1 tsp mexican oregano
  • 4 roasted garlic cloves -- sliced
  • 1 cup corn kernels
  • 1/2 16 oz can pinto beans -- drained
  • 3 cups Cheddar cheese -- shredded
  • 1/2 4 oz can diced green chiles -- drained
  • 2 links Italian sausage* -- or chorizo, crumble
  • For dough (in ABM):
    Place all ingredients in bread pan according to manufacturers' directions. Set for DOUGH cycle. When cycle is over, punch down dough, close machine again and let the dough rise again for 45 minutes. Remove to floured work surface. Cut dough into 2 pieces. Roll each piece into a nice, 11" circle.

    Place on baking sheets that have been coated with cooking spray (or round cake tins if you want the pizza to be thick crusted). Cover and let sit for 1/2 hour.

    While dough is resting, place tomato slices on a greased cookie sheet. Preheat oven to 375F. When hot, sprinkle Mexican oregano on each tomato slice and drizzle with a bit of corn oil.

    Roast for 1/2 hour at 375F until the slices are a bit shriveled. Remove from oven and let cool for a few minutes so they are moveable.

    When dough is rested, place it in a preheated 375F oven and bake it for 15 minutes. Remove to let it cool a touch.

    Spread roasted garlic slices on each pizza crust. Top with some corn kernels and pinto beans. Sprinkle on sausage crumbles, cheese, and chiles. Topped with roasted tomato slices. Bake for another 15 minutes at 375F until cheese is bubbly.

    Garnish with cilantro, if you wish.

    NOTES : Risa's notes:
    * I cooked the sausage in the microwave. I took it out of the casings and then I crumbled it in my fingers. Placed it in a microwave container (Pampered Chef's is the best I've ever seen. Had mine for 1 year already and use it every day) in a single layer. Cooked it for 1 minute on HIGH. Checked it. If it was fully cooked, I removed it to a paper towel for draining. If it wasn't, I cooked it for another minute. Worked out really well. Less mess than cooking it in a pan.

    This is a great way to get kids to eat sausage, beans and other objectionable foods. With my son, just top anything with cheese, a thick layer of cheese, and he'll eat it. He ate most of it until he realized what I did and then he pulled a bit of the stuff off. He still ate 2 slices though.
