    White Chili

  • 1/2 cup onion -- chopped
  • 1 tbsp garlic -- minced
  • 2 tbsp vegetable oil
  • 2 tsp ground cumin -- or to taste
  • 2 cups cooked turkey meat -- chopped
  • 1/3 cup pearl barley
  • 1 16 oz can cannellini beans -- drained & rinsed
  • 1 jalapeno pepper -- chopped
  • 3 cups chicken broth or turkey broth
  • 1 tsp dried mexican oregano -- crumbled
  • 1 tsp kosher salt
  • 3/4 tbsp Wondra flour -- dissolved in
  • 1/4 cup water
  • 2 cups Monterey jack cheese -- shredded
    Garnishes:
  • scallions -- chopped
  • fat-free sour cream
  • salsa -- your favorite
