Chipotle Vinaigrette

Chipotle Vinaigrette

2 Tablespoons cider vinegar

2 Tablespoons tablesp. fresh lime juice

2 teaspoons p. Dijon mustard

2 teaspoons p. finely chopped Chipotel peppers in Adobo sauce

1 teaspoon chopped cilantro

1 teaspoon Sugar

1 Tablespoon olive oil

s & p to taste.

In small bowl whisk together vinegar, lime juice, mustard, chipotles, cilantro & sugar. Gradually whisk in olive oil. Season with salt & pepper. Not very hot but it might help use up those big cans of chipotles.
