Chipotle Vinaigrette

    Chipotle Vinaigrette

  • 2 Tablespoons cider vinegar
  • 2 Tablespoons tablesp. fresh lime juice
  • 2 teaspoons p. Dijon mustard
  • 2 teaspoons p. finely chopped Chipotel peppers in Adobo sauce
  • 1 teaspoon chopped cilantro
  • 1 teaspoon Sugar
  • 1 Tablespoon olive oil
  • s & p to taste.
  • In small bowl whisk together vinegar, lime juice, mustard, chipotles, cilantro & sugar. Gradually whisk in olive oil. Season with salt & pepper. Not very hot but it might help use up those big cans of chipotles.
