    Cucumber And Chili Salad

  • 2 large cucumbers
  • 1 1/2 tsp salt
  • 3 tbls red wine vinegar
  • 1/2 tsp sugar
  • 2 tsp finely chopped fresh hot chilies
  • Peel the cucumbers and cut crosswise into 1/8 inch thick rounds.
    Combine the cucumbers, salt, 1 tablespoon of the vinegar and 1/4 teaspoon of the sugar in a bowl. Turn with a spoon until well mixed. Let stand at room temperature for about 30 minutes.
    Take the cucumber slices and squeeze them to remove any excess moisture and place them in a serving bowl. Add the remaining vinegar, sugar and chilies and toss lightly. Serve at once.
