    Curried Turkey Salad With Apple & Walnuts

  • 1/3 cup mayonnaise
  • 2 1/2 teaspoons curry powder, toasted (see note)
  • 1/4 teaspoon fresh lemon juice
  • 1 Pinch cayenne pepper
  • 2 cups cubed roasted turkey
  • 1 cup peeled, cored and diced red apple
  • 1 celery stalk, diced
  • 1/2 cup peeled, seeded and diced cucumber
  • 1/4 cup chopped toasted walnuts
  • Salt and pepper to taste
  • INSTRUCTIONS:
    Combine the mayonnaise, curry powder, lemon juice and cayenne pepper; stir to blend.

    Combine the turkey, apple, celery, cucumber and walnuts. Fold in the dressing. Season with salt and pepper.

    Yields enough for 6 pita breads.

    Note: Toast the curry powder in a small nonstick pan over low heat for 1 minute, or until just fragrant, stir often. This will help remove the raw flavor from the curry powder.
