Dave's Black Bean/Corn Salad

    Dave's Black Bean/Corn Salad

  • 2 16 oz cans Premium Black Beans rinsed and drained
  • 1 16 oz can Corn rinsed and drained
  • 1 8 oz can Red Kidney Beans rinsed and drained
  • 1 Red Bellpepper diced
  • 1 Green Bellpepper diced
  • 1/2 bunch Cilantro finely chopped, not too fine though
  • 1 Red Onion diced
  • Juice of 1 Lime
  • Salt to taste
  • Black Pepper to taste
  • 1 TBS Olive Oil
  • 1 TBS Honey
  • 2 TBS Italian Dressing
  • Mix together in a large bowl and refrigerate. Better on the second day once the flavors blend together. You can use more or less italian Dressing if you chose, you don't want a lot of liquid in the salad.
    Yield: 8 to 10 servings
