    Roasted Sweet Potato Salad

  • 3 sweet potatoes
  • 1/2 cup onion -- roasted or broiled
  • 1/2 cup red bell pepper -- roasted or broiled
  • 1/2 cup New Mexican HOT GREEN chiles -- coarse chopped
  • 1/4 cup black beans
  • 1/2 juicey lime's juice
  • 2 tablespoons New Mexican Red Chile Sauce
  • cilantro -- to taste
  • salt -- to taste
  • Sweet potatoes cook, peel, cut in big chunks, broil or grill. Julienne onion and red pepper in large chunks. Roast and peel chiles. COMBINE INGREDIENTS & TOSS LIGHTLY (DO NOT BREAK POTATOES UP TOO MUCH) SERVE COLD (or hot) * We combine different colors of yams & sweet potatoes.
