    Thai Cucumber Salad

  • 3 Large Cucumbers, peeled (I peel to leave a bit -- (3 to 4) of green on) and sliced very thin
  • 2 (or more, depending on your preference) Thai Dragons, minced
  • 1/4 cup chopped cilantro
  • 2 tablespoons crushed peanuts
  • 6 tablespoons white vinegar
  • 6 tablespoons sugar
  • 3/4 cup water
  • salt/pepper to taste
  • Toss the first four ingredients in a bowl. Mix together the vinegar, sugar and water in a saucepan and bring to a boil. Boil until the sugar is dissolved. Pour over the cucumber mixture. Add salt and pepper to taste. Allow to cool then chill.
