    Corn-and-jicama Salsa

  • 2 cups fresh corn kernels (about 4 ears)
  • 1 cup finely chopped tomato
  • 1/2 cup jicama, finely chopped and peeled
  • 1/2 cup chopped onion
  • 2 tablespoons minced fresh cilantro
  • 1/4 teaspoon salt
  • 1/4 teaspoon paprika
  • 1/4 teaspoon black pepper
  • 1 (4-ounce) can chopped green chiles, drained
  • 1 Lime, Juiced
  • Combine all ingredients in a large bowl. Serve with grilled fish or chicken.
