Cucumber Salsa

    Cucumber Salsa

  • 1/2 cucumber; peeled and diced
  • 1 red onion; chopped
  • 3 tablespoons fresh mint leaves; chopped
  • 1 tablespoon white wine vinegar
  • 2 tablespoons extra virgin olive oil

    • Combine all the ingredients. Season, cover and chill for 1 hour.
