    Salsa Vinagreta

  • 4 small tomatoes, peeled and chopped
  • 1 small onion, (1/2 cup), chopped
  • 2 jalapenos, seeded and chopped
  • 2 teaspoons olive oil
  • 1 teaspoon vinegar
  • 1 teaspoon lime juice
  • 2 cloves garlic, minced
  • 1/2 teaspoon crushed dried oregano (Greek if available)
  • 1/2 teaspoon salt
  • Combine all ingredients. Serve. Makes about 2 cups.
