    Holiday Salsa

  • 1/2 onion, chopped
  • 1/4 tsp. garlic, finely chopped
  • 1/4 tsp. fresh ginger, finely chopped
  • juice of 1 lime
  • 1 jalapeno pepper, finely chopped (substitute habanero if desired)
  • 1 cup fresh cranberries, chopped in blender or food processor
  • 1 16-oz. can of peaches
  • 2 tbs. cilantro, chopped
  • 2 tbsp. grated coconut
  • Saute onion until opaque. Add garlic and saute lightly. Add remaining ingredients and heat thoroughly. The colors in this salsa are great. We serve this over grilled chicken breasts but it is also good used as a condiment with any dinner.
