Peach Coconut Salsa

    Peach Coconut Salsa

  • 4 ripe peaches chopped coarsely
  • 1 medium onion finely chopped
  • 1/4 cup olive oil
  • 1 jalapeno or habanero pepper chopped finely
  • 1 tbsp garlic finely chopped
  • 1/4 cup chopped cilantro
  • 2 tbsp fresh ginger finely chopped
  • juice of 1 lime
  • 1/2 cup shredded coconut

    • Saute the onions and garlic in the olive oil until onions are opaque. Add remaining ingredients and heat through careful not to overcook.

    Note: My husband Dave and I won second place in Coyote Moon's salsa contest. Thought we would share it with you.
