Peach Salsa

    Peach Salsa

  • 2 cups ripe peaches, peeled and diced
  • 1/2 cup red onion -- diced
  • 1/2 cup red bell pepper -- diced
  • 1/2 cup fresh mint -- minced
  • 3/4 teaspoon minced jalapeno or serrano chile
  • 2 tablespoons olive oil
  • 2 tablespoons lime juice
  • 2 tablespoons fresh ginger root -- grated
  • Combine all ingredients and serve. This will be even better if it can mellow for half an hour. It is particularly good with grilled or roasted chicken, beef or lamb.
