    Strawberry Salsa

  • 1/2 medium red onion; chopped
  • 1 jalapeno pepper; finely chopped
  • 1/2 red pepper; seeded and chopped
  • 1/2 yellow pepper; seeded and chopped
  • 1/2 green pepper; seeded and chopped
  • 4 tablespoons fresh coriander leaves; chopped
  • 100 g strawberries; hulled and sliced
  • 4 tablespoons fresh orange juice
  • 2 tablespoons fresh lime juice
  • 2 tablespoons extra virgin olive oil
  • salt and pepper
  • Place all the ingredients in a large mixing bowl and toss to combine. Cover and refrigerate for at least 2 hours or up to 4 hours. Fifteen minutes before serving, remove the salsa from the refrigerator, so that it loses some of its chill.
