    Tropical Tomato Salsa

  • 2 tablespoons lime juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon grated peeled fresh ginger
  • 1 cup diced peeled mango
  • 1 cup chopped tomato
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons chopped shallots
  • 2 teaspoons minced seeded jalapeņo pepper

    • Combine the first 4 ingredients in a medium bowl. Add mango and remaining ingredients; toss gently.
    Yield: 2 cups (serving size: 1/2 cup).
