    Fried Pb, Banana & Chile Sandwich

  • 1 small ripe banana -- mashed
  • 2 slices white bread (not too soft)
  • 1 small ripe chile -- seeded & minced
  • smooth peanut butter
  • 1 tbsp unsalted butter
  • Lightly toast the bread. Spread the peanut butter on one side. Mash together the banana with the chile. Place it on the other slice of bread.

    Place a small pan over medium heat. Melt the butter. Put the two parts of the sandwich together. Fry the sandwich in the butter until golden brown on both sides.

    Remove to a plate, cut in half and eat.

    Serve with chips!
