  • 1/2 lb turkey sausage
  • 1 lb ground beef
  • 2 cups celery -- sliced
  • 1 cup onion -- chopped
  • 2 cloves garlic -- minced
  • 1 11 oz can kernel corn -- drained well
  • 2 tsp pure chile powder
  • 1 1/2 tsp salt
  • 1/2 cup yellow cornmeal
  • 1 6 oz can black olives -- pitted & sliced
  • 1 1/2 cups cheddar cheese -- shredded
  • Paprika
  • Cook sausage and beef together in a skillet until browned; stirring to crumble. Drain well. Stir in celery, onion, and garlic. Cook until tender and barely brown. Stir in corn, tomatoes, chile powder and salt. Simmer 15 minutes.

    Slowly stir in cornmeal, cooking until thick. Remove from heat; stir in olives. Pour into a greased 2 qt casserole. Sprinkle with cheese and paprika. Bake, uncovered, for 350F for 35 minutes or until set.

    Serves 6-8 people.
