    Pescado en Salsa de Naranja a la Veracruz

  • Fresh halibut
  • Pour juice of 1 lemon and 1 lime over fish
  • chill for 1 hour
  • salt and white pepper fish to taste
  • 2 tablespoons oil in pan-add fish
  • 2 tomatoes and 6 serranos -chop and cover fish
  • add 1 minced onion 1 squezzed garlic clove and 2 tbs more oil
  • bake at 350 F --15 minutes -dont over cook! take off stove
    Add juice of 2 oranges and zest of 1 add 1 cup chopped Cillantro sit 2 minutes
    Garnish with Orange segments stuffed olives and bread triangles fried golden brown..
