Jamaican Red Pea Soup

    Jamaican Red Pea Soup

  • 2 cups kidney beans, soaked and drained
  • 10 cups water
  • 2 T oil
  • 2 med onions, diced
  • 1 lg green pepper, diced
  • 3-4 cloves garlic, minced
  • 1 Scotch bonnet pepper, minced (I used 3)
  • 4 scallions
  • 1 lg carrot, diced
  • 1 cup sweet potato
  • 2 t thyme
  • 1 cup coconut milk
  • 1/2 t allspice
  • 1/2 t black pepper
  • 1 t salt
  • Cook beans in water on medium heat for 45 minutes. Drain, reserving 5 cups of the liquid and set aside. Saute onions, green pepper, and garlic in oil for 7 minutes. Add beans, cooking liquid and remaining ingredients except salt. Simmer for 1 - 1 1/2 hours on low. Add salt to taste.
    serves 8
