    Taco Soup

    • 2 lbs Ground Beef
    • 1 Large onion, chopped
    • 1 pkg (1.25 oz) dry taco seasoning
    • 1 pkg (1 oz) dry Hidden Valley ranch dressing
    • 1/4 tsp ground pepper
    • 1/2 tsp garlic powder
    • 2 tsp chili powder
    • 2 cans (16 oz each) tomatoes
    • 1 can (15 oz) kidney beans
    • 1 can (14 oz) yellow hominy
    • 1 can (15 oz) pinto beans w/ jalapenos
    • 1 can (4oz) green chilies, chopped
    • Salt to taste
    • 1 Large bag (17 oz) corn chips (Fritos)
    • 2 cups sharp cheddar cheese, grated

    Brown beef and onions slightly in a heavy deep kettle. Add taco seasoning, ranch dressing, ground pepper, garlic powder and chili powder, tomatoes, beans, hominy and green chilies. Mix well. Simmer, covered, for 30 minutes. Taste and add salt if needed, however, remember the corn chips are salty. To serve, place handfuls of corn chips in the bottom of individual bowls. (If chips are large, break them up a little.) Ladle soup over the chips, and top with grated cheese and some olives. ( wee like to add a dollop of sour cream.)
