David's Besan-Stuffed Chiles

Mix together:

Remaining ingredients:

green chiles, e.g. large cayennes, fresno, jalapeno, large serranos

ghii/oil

black mustard seeds

yoghurt

Stuff spice/besan mix into green chiles (seeds and membranes removed, per taste preference, but also to make some room there). Fry chiles in ghii. Add black mustard seeds (they should pop a bit). Add yoghurt and cook slowly until done.
