Peel red potatoes and cut into 2-inch chunks.
Put potatoes in bowl of cold water as you peel them to prevent
discoloration. For the uninitiated, wasabi is that green Japanese horseradish which can (literally) take your breath away! Remind me to tell you some day about the time I accidentally wolfed down a blob of wasabi in a dimly-lit restaurant in Yokosuka, Japan......woweeeee!! * Wasabi is available at large super-markets and Asian groceries.
